The color, taste and texture of fruit and vegetables often changes when they are embedded in baked products. This is often because of temperature effects caused by the baking process. The objective of this challenge is to find ways to put dices of fruit or vegetables into baked products without reducing the shelf life of the finished product or losing the natural taste, color, or texture of the fruit or vegetables.
