We require an experienced chef de Partie to cover holiday period for the whole month of August in a High volume Asian and South American AA Rosette Restaurant. The restaurant is based in a modern and funky well know 5 star hotel based in London's west end. The food is a mix of Asian and South American styles; with a focus on small plates, sharing dishes; with main dishes of a variety of grilled meats and fish. The Chef De Partie would be responsible for running a busy section and mentoring the junior chefs on that section. You must have a background in high volume restaurant service, as the restaurant often does over 300 covers per service, so you must be used to working at that kind of pace and intensity. It would be beneficial if you had a strong skill set working on the grill at high volume and experience with Asian cuisine / spices and flavours. You must have 3-4 Years experience at Chef De Partie level in similar level rosette or Michelin star core background. You would be working on a full time basis work you would be predominately working 5 shifts over the Monday to Sunday period, 10 to 15 Hours a day and looking at an average of 50-60 hours a week. We would be looking to send you on a paid trail there beforehand, so you and the restaurant can see if it suits both parties.
